General Info and Instructions for Reheating/Preparation
*** Check for Specific Restaurant Instructions Below ***
Prep times varies, however average start to finish is approximately ten to fifteen minutes. Please call us with any
questions not answered below. 1-877-777-7723
Upon the arrival of your package, open carefully. Remove the packages and place in the refrigerator until you are ready to
prepare. Most items, if not to be eaten within several days can be successfully frozen!
When you are ready to enjoy your meals, follow appropriate instructions below. Most dishes are microwavable, however,
for the most part our chefs recommend conventional reheating in oven or on stove top. This will only add a few more
minutes to the prep time. If you choose to microwave please place food in microwavable safe cookware.
For baked items for which a crisp crust is desired, such as Pizza, Phyllo Triangles - Place on a sheet pan in preheated
350-degree F oven, uncovered, for approximately 8-10 minutes.
For saucy items such as Pasta, Curries - Pour into a sauce pan adding a very small amount of water as needed, cover,
heat on medium-low, stirring often until the sauce reaches a simmer, approx. 5-10 minutes- don’t let the sauce stay on
the heat any longer than necessary or any veggies can become overcooked.
For Grains, Cooked Pastas - If grains or pastas arrive separately from the sauce, reheat in the oven or stove top. Before
placing the grain or pasta in the pan place approx. 1/4 inch of water in the pan, add the grains or pasta, cover and heat
(stove top on med-low temp. and oven 350 degree F, preheated) for approx. 10 minutes. Stir often. Add small amount of
additional water if necessary.
Desserts such as pies, dumplings, or anything with a crust - Cover and place in 350 degree F -preheated oven for
approx. 8-10 minutes. Uncover, continue reheating for approx. 5 minutes to achieve crispness.
Reheating items such as the Spiced Nuts or Bread. Can be reheated to regenerate crispness - Place uncovered on a
baking sheet in a preheated 350 F degree oven. Spice nuts for approx. 3-5 minutes. Breads for approximately 5-7
minutes.
Desserts that require no reheating - Leave in the refrigerator until ready to eat. Cakes are best served at room
tempurature so remove from refrigeration several hours before serving.
Bakery Items that need to be soft such as the Cinnamon & Clove Sticky Buns or Apple Dumplings -
Reheat in 350 degree F preheated oven, covered*, for approx. 8-10 minutes.
*When covering items for reheating, aluminum foil is easiest, however, when the foil makes contact with food –especially
any item that is acidic- it will tend to leave an undesirable blackish residue on the food. To avoid this effect, first cover the
food in parchment or baking paper, then place the foil around that. This will also allow the air to flow better around the
food for a more even heating process. Or carefully wrap items loosely with only foil.

STOVETOP & OVEN REHEATING METHOD RECOMMENDED
Steamed Dumplings:
In heavy bottomed sauce pan, heat to almost a boil, over medium-low flame, approximately 1/4 inch of water and/or a
spray of non stick cooking spray. Add dumplings and cover. Heat/steam approximately 4 minutes until thoroughly
warmed. Warm accompanying dipping sauce over medium-low heat approximately 30 seconds.
Pan Fried Dumplings:
Coat heavy bottom sauce pan with thin layer of olive oil or non stick
cooking spray and heat to medium-low. Add dumplings and cover. Heat approximately 3 - 4 minutes until thoroughly
warmed. Warm accompanying dipping sauce over medium-low heat approximately 30 seconds
Entrees:
Over low to medium-low flame, heat olive oil (or non-stick cooking spray) in heavy bottom sauce pan. Add entree as well
as a tablespoon or more of water as needed (optional). Heat approximately 3 minutes to desired temperature, stirring as
necessary.
Veggie Pecan Beef & Orange Veggie 'Beef' with Pineapples:
Separate and set aside as many pieces of pineapple (for Orange 'Beef" dish) as desired, to add back to the sauce pan
only for the last 15 - 20 seconds of heating. Heat a good coating of olive oil (recommended here over non-stick cooking
spray) to a slightly higher heat than medium-low flame before adding Veggie "Beef” chunks to sear and slightly crisp the
Veggie "Beef". While crisping, watch closely to avoid sticking or burning. Remove "Beef" chunks, lower heat and add a
tablespoon or more of water as needed to sauce, adding back rest of the sauce and the pineapple chunks (for Orange
"Beef" dish) for a last 20-30 seconds of heating.
Rice:
Stove Top Instructions - Add approximately 1/4 to1/2 inch of water and
heat with rice over medium heat. Approximately 2 - 3 minutes. Make sure and check often so that water has not
evaporated completely as rice will stick and burn without enough water or steam.
Microwave Instructions for both Entrees and Rice:
Reheat approximately 2 - 3 minutes on Medium to High. DO NOT overheat. Please adapt time according to your individual
microwave settings.
Refrigerate Key Lime Pie and Seaweed Salad until serving time.
SUBLIME
Frito Misto:
In a heavy bottom sautee pan, heat a coating of olive oil over med-low heat - approximately 2 minutes. Be patience to
make sure oil is hot enough for a slight sizzle when adding the cauliflower pieces. Add cauliflower pieces, flattest surface
face down. Cover and sautee without turning - approx 2-3 minutes per “side” or flattest surfaces of the califlower. Be
patience and do not turn too soon. (Good things come to those who wait!) The goal is a dark golden crispness before
turning. Repeat procedure - turn and crisp each flat surface or “side” of cauliflower - there are sometimes 3 to 4 ‘sides’ to
crisp. Remove cover for last minute or two of heating. Do not replace cover as this could diminish crispness. Place on
serving plate and serve with Japenese Tempura Sweet Chili Dipping Sauce.
Portobello Tenderloin:
Onion Rings: In a heavy bottom sautee pan, heat a coating of olive oil to med-low heat -approximately 2 minutes. Be
patience to make sure oil is hot enough so that there is a sizzle when adding the onion rings. Add onion rings, placing the
flattest side of the onion ring face down. Cover pan and sautee without turning for approx 2-3 minutes per “side” or
flattest surface. There are sometimes 2 or more ‘sides’ to crisp. Repeat procedure approx 2 to 3 times - to crisp each flat
surface or “side” of the onion ring. Be patience and do not turn too soon. As with the Frito Misto, the goal is a dark golden
crispness before turning. Remove cover for the last few minutes of heating. Do not replace cover as the moisture this
causes could diminish the desired crispness.
Portobello, Garlic Potatoes & Spinach:
(These are of the few items where a microwave is a first choice and will work well for reheating.) While onion rings are
crisping per instructions above, place mashed potatoes on a microwave safe serving plate and heat on medium to high
for approx 1 ½ minutes, stirring as necessary.
Add spinach and heat an additional 1 ½ minutes, stirring as necessary.
Place Portobello on plate, separating the top and bottom of the Portobello for more even reheating. Microwave for an
additional minute. During this minute, pour au poivre sauce into a small microwave safe container and lastly add to
microwave, heating all for a final approx 1 minute. (Please adjust time according to individual microwave propensities.)
Remove all from microwave and pour au poivre sauce to pool on serving plate, placing reassembled Portobello
tenderloin (reassemble Portobello, placing top half of Portobello back on top) setting “Tenderloin” on top of pool of au
poivre sauce.
Crown the Portobello Tenderloin with a tower of onion rings and your masterpiece is ready to serve.
Sublime Picatta
In a heavy bottom sautee pan, heat a coating of olive oil to med-low heat - approximately 1 1/2 minutes before adding the
Gardein Medallions. Sautee the Medallions uncovered on each side approximately 1 ½ to 2 1/2 minutes to achieve a little
bit of crispness. Try not to turn more than once for each side. Remove Medallions, lower heat and add the Lemon Caper
Sauce to the pan and stir. Heat approximately 30 seconds. Pour sauce over Gardein Madallions.
Braised Spinach, Roasted Garlic Mashed Potatoes, Lemon Caper Sauce -
While Medallions are sauteeing, microwave or reheat in pan over very low heat to warm. Coat pan with cooking spray or
very small amount of olive oil to prevent sticking.
Grilled Seitan Steak
In a heavy bottom sautee pan, heat a coating of olive oil to med-low heat - approximately 1 1/2 minutes before adding the
Seitan Steak. Sautee uncovered on each side approximately 1 ½ to 2 1/2 minutes to achieve a little bit of crispness. Try
not to turn more than once for each side.
Add a dash of olive oil to chilled watercress, mix and place onto of Seitan Steak.
Israeli couscous with currants & almonds - While “steak” is cooking, microwave or reheat couscous in pan over very low
heat to warm. Coat pan with cooking spray and a very small amount of water - approximately 1 teaspoon.
Place all on serving plate adding the chilled side of cucumber soy yogurt sauce.
Spinach & Eggplant Raviolis
Boil water to cook pasta which arrives fresh, handmade and uncooked! Add raviolis to boiling water and cook for 8 to 10
minutes. Heat sauce in a sauce pan over low heat adding very small amount of water as needed.
Mac n’ “Cheese”
Place in a sauce pan over med to low heat, add a small amount (as needed) of soy milk - approximately 1 tablespoon -
and a dallop (to taste) of earth balance or olive oil. Continue stirring as it heats. If needed add more soy milk in very small
increments and earth balance to attain desired creaminess. We recommend serving with slices of fresh organic
tomatoes and broccoli. Season to taste. (Menus are not pre-salted.)
Apple Napolean
Bake in preheated oven at 350 until golden brown - approximately 12 - 15 minutes. Just before serving, warm Vanilla
Rum Sauce in a microwave safe dish approximately 10 - 15 seconds and swirl sauce on bottom of serving plate, placing
slice of Apple Filo on top of Vanilla Rum Sauce Swirl to serve.
Smore Brownie
If desired, warm in microwave for approximately 15 seconds before serving.
